Description
La Maison Borde offers a wide selection of dried mushrooms.
Drying (or dehydration) is an ancient preservation method that involves removing the water from mushrooms. Humans have always sought to preserve food, and the most natural method is to dry them outdoors. This is the case with fish, meat, and cereals, but also mushrooms. This technique promotes the preservation of mushrooms without denaturing them. It approximates the "fresh" state of the fungus while preserving its organoleptic qualities. Drying mushrooms preserves them naturally and has little or no effect on their taste and flavor. Mushrooms can therefore be consumed year-round, as dried products can be stored for up to 24 months.
In Borde, wild mushrooms are dried using different methods:
- Air-drying: Mushrooms are usually placed on racks outdoors. They are dried under the influence of the breeze and the sun, turning them periodically to promote water removal. This drying method, considered "slow," will better preserve the mushroom's flavors and reveal its full aromatic potential. It is highly variable and requires varying amounts of time because it is closely linked to weather conditions.
- Oven drying: This involves removing the water content from the mushrooms by subjecting them to varying degrees of temperature. This method allows you to control the heating time. It is generally faster than air drying, as the mushrooms are exposed to higher temperatures. The aromatic profile of the mushrooms is then further degraded (loss of volatile aromatic compounds) compared to air drying.
- Wood-fired drying: Some mushrooms can be dried over the heat of a wood fire. This method is often used to dry morels and gives them a very distinctive "smoky" smell. This is the case with morels from India, Turkey, and Yunnan.
How to rehydrate dried mushrooms?
Rehydrating dried mushrooms is very simple:
- All you need to do is soak them in warm water or milk for about 15 minutes.
- Drain them and place them in boiling water for 1 minute. Squeeze them gently.
- Your mushrooms are now ready to cook; they should be thoroughly cooked before eating. You can then cook them according to your chosen recipe, just like fresh mushrooms.
Note: For morels, we recommend rinsing them well (twice) to remove impurities.
Régis and Jacques Marcon's rehydration advice : Generally, 15 to 20 minutes should be enough to rehydrate mushrooms by soaking them in warm water. Régis and Jacques Marcon, with whom we work (three-star chefs in Saint-Bonnet-le-Froid), rehydrate dried mushrooms for 48 hours and then use the rehydration water in their preparation.
How to reuse rehydration water from dried mushrooms?
To provide an even more pronounced mushroom flavor, you can recover the mushroom rehydration water by filtering it through a fine-mesh sieve to remove impurities. This flavored water can then be used to deglaze meats, cook pasta, rice (risotto), and legumes, or even incorporate it into a broth, velouté, a reduction, or a sauce base.
How to cook dried mushrooms?
Once the mushrooms are rehydrated and pressed, you can cook them using your preferred cooking method: in a pan with a little fat, or directly in all your preparations: baked, in a casserole (dishes in sauce), etc.
Many combinations are possible with dried mushrooms: cream-based sauces, soups, veloutés, béchamels, gratins, purées, pastas, risottos, quiches, tarts, omelets, with white meats (poultry) or with vegetables (wok or as an accompaniment to dishes).
To make sauces or veloutés, you can also blend your mushrooms (not rehydrated) and add them to your dishes (purees, veloutés, soups, sauces, pastas, savory pie crusts, quiches, omelets). If you have any leftover mushroom powder, you can store it in a jar and save it for future recipes.
